Makes 8 servings

This recipe is dedicated to everyone having a birthday and committed to eating clean to celebrate. This is a delicious chocolate cake that is raw, full of goodness and feels decadent. It’s very rich !! #yourewelcome

Here’s to a healthier option 🙂

You will need the following

Start with the base:

150g Cashew Nuts

80g dedicated Coconut or Oats

60g dates (4 medjool dates)

Juice of 2 Lemons (60ml)

2 tablespoons Coconut Oil

Himalayan Rock Salt to taste

Pop all these ingredients into a food processor and mix until it forms a stiff ball.

Press down into 20cm cake tin, lined with parchment paper.

For the topping:

150g nuts, you can use cashew, pecan, hazelnuts, almonds or a combo. I used cashews in this recipe.

4 heaped tablespoons Cocoa Powder

2 tablespoons Coconut Oil

80ml Maple Syrup

1 teaspoon Vanilla Extract

Juice of 2 Lemons (60ml)

Mix together in a food processor, you may need to adjust processing time if you like more crunch.

Pour over the top of the base, smooth with the back of a spoon.

Place in the freezer for 1 hour before serving.

Delicious served with a nice cuppa.

Happy birthday to you .. 🍰 ..
