These remind me of the frikkadels my mum used to make for us as a family. Growing up in SA they were a firm favourite. Here is a plant based version that is delish, especially with pickled cabbage and jalapeños.

You will need:
450g Plant based Mince (I’ve used Vivera)
350g grated Courgette
200g Tomato puree
Add these ingredients to a mixing bowl and combine well.

In another bowl add
2 Eggs, beaten

Then and add the garlic, spices and mix well.
2 Cloves of Garlic, minced
Salt & Pepper to taste
Piri Piri Powder to taste
3 heaped tablespoons of Buckwheat flour
Mix in the buckwheat flour.
Take 1 large Tablespoon of the mixture and form a small patty with your hands, gently dipping the mix into some more Buckwheat flour.

Dust each side and gently place into a hot frying pan with coconut oil.

Turn once the side has started browning, repeat until they have reached the desired crispness and remove from the heat.

Serve on a plate with salad leaves, pickled cabbage, jalapeños and a drizzle of tahini.
PS: The mixture would work for burger patty’s too.
