Seriously Divine Marinated Tofu

1 block firm Tofu

1 Chilli, sliced

handful of Spring onions, sliced

1 tsp fresh grated Ginger

1 clove Garlic, crushed

1 tbsp Molasses

500ml Pineapple juice (fresh)

Variety of veggies to stir fry

First press the tofu – place the block of tofu on 4 -5 paper towels on a board, place another layer of paper towels on top, add another board and put something heavy on top.  Leave to drain (the longer you can leave it the firmer it will be). Dice the tofu and place in a tupperware container. Mix the chilli, spring onions, ginger, garlic, molasses and pineapple juice and pour in to the container. Leave to marinate overnight if possible.

Heat some coconut oil in a pan and add the tofu and fry on both sides until browned, then add sliced veggies of your choice e.g. spinach, green beans, courgettes, peppers, onions etc) with some cumin or fennel seeds (if desired). Pour the marinade over and cook through.
