Veggie Lover’s Frittata

Makes 4 Servings

Who loves frittata? Well here you go, this is a lovely breakfast option that will help to boost your protein for the day.

You will need:

6 Free range eggs

6 Sausages chopped (I used Quorn in this recipe)

1 Leek sliced

1 Sweet Potato sliced

1 Red bell pepper sliced

1 Red Chilli sliced

2 Courgettes sliced

1/2 Cup salad onions sliced

Coconut oil for cooking

Himalayan Rock salt & Black pepper

1 Tsp Ground Chilli – if you like heat

Preheat your oven to 175.

Prepare the sweet potato, bell pepper, courgette, Chilli, slicing finely.

Cook the sausages in a pan using the coconut oil, until they are cooked through and browned. Add the Chilli Powder and season with salt, pepper to taste. Add the veggies and simmer for about 10 minutes.

Pour mixture into a baking dish and top with salad onions.

Whisk the eggs and pour them over the veggies.

Bake for 25 minutes or until the centre of the frittata is cooked through.

Serve with a slice or two of ‘The Life Changing Loaf of Bread’
