Simple Clear Soup

This soup is amazing at helping the digestive system along, perfect during a cleanse.

You will need the following :

  1. 4 carrots – chopped

  2. 1/2 head of celery – chopped

  3. 1 medium onion – cut into 1/4’s

  4. 2 cloves of garlic

  5. 3.5 litres of water

  6. 3 sprigs of fresh parsley, chopped

  7. Large handful of spinach, shredded

  8. 1/2 tsp cayenne pepper

  9. Fresh lemon juice

Place the carrots, celery, onion and garlic into a large saucepan. Add the water and bring it to the boil. Simmer over a low heat for 20 minutes. Add the parsley and spinach and simmer for another 10 minutes. Remove from the heat and pour the soup through a sieve into a jug, throw the vegetables away.

Season with cayenne pepper and lemon juice if you like it hot.
