Spicy Chicken Lettuce Bowls

If you love spicy food this recipe is for you! The chilli & lemon flavours are wonderful, but be warned it’s hot hot hot. If you’re not a fan of heat, go easy on the chilli and if you prefer mild food, ditch the chilli all together.

Makes enough for two.

You will need the following :

4 tablespoons coconut oil

300g ‘chicken’ – I use Vegideli Chicken Pieces, or Quorn Chicken Pieces

Himalayan Rock Salt & freshly ground black pepper

Juice of 1 Lemon

1/2 cup liquid aminos or coconut aminos

1-2 fresh chillis sliced

1 teaspoon chilli powder

1 teaspoon cinnamon powder

1 teaspoon cumin powder

1 tablespoon black sesame seeds

1 finely chopped onion

1 iceberg lettuce

1-2 avocados cubed

In a large pan, melt 2 tablespoons of coconut oil. Add the onions and season with salt, pepper, chilli, cinnamon and cumin powder. Add the chicken pieces to the onion mix and combine the ingredients well. Cook well, remove from heat when done.

In a bowl combine the lemon juice, liquid aminos, fresh chillis, sesame seeds. Add the cooked chicken and mix well, set aside.

Remove the core of the lettuce and wash the leaves well, peel the lettuce into cups.

Layer inside the lettuce cup, chicken mix and chopped avocado. Although you may not want to share this dish is best enjoyed with friends.
