Tofu in a teriyaki sauce is magic ! I love this dish, it looks so simple on the plate and punches a real surprise in your mouth when the flavours combine. Makes 2 servings.

You will need the following ingredients:
1 Tablespoon Ginger, minced
1 Garlic Clove, minced
1 Teaspoon Sesame Oil
2 Tablespoons Liquid Aminos
1 Tablespoon Honey
1 Cup Brown Rice, cooked
2 Handfuls Baby Spinach
400g Marinated Tofu, cubed
1 Tablespoon Coconut Oil
1 Avocado, sliced
1 Tablespoon Sesame Seeds
In a small saucepan bring the sesame oil, coconut aminos, garlic, ginger, honey and sesame seeds to a gentle boil. Lower the heat and let the mixture simmer for 5 minutes or until slightly thickened.

Cook the rice and steam the spinach.
Pop the tofu into the pan with the teriyaki sauce and cook each side until crispy. Place the spinach, rice and avocado onto a plate, add the tofu pieces and pour the remaining marinade over it. Season and enjoy.
