Spinach leaves, chopped courgette, chopped green pepper, chopped celery, artichoke hearts from a jar, handful of drained, tinned green lentils, a dollop of hummus topped with jalapeno and toasted cashews. Dressed with oil from the artichoke jar & lime juice (or lemon). Black pepper to taste.
