Simple ‘Chicken’ Salad

Surprisingly simple & delicious salad, takes 15 mins to prepare and is sooooo satisfying. I love it.

Makes 3-4 Servings

You will need the following:

1 Tablespoon Coconut Oil / Butter

300g ‘Chicken’ Pieces – I use a chicken substitute.

1 Lettuce or Equivalent Leafy Greens, Spinach, Kale or mixed greens

10-15 Cherry Tomatoes

1 Avocado Chopped

1 Yellow / Orange Pepper, sliced

6 Baby Cucumbers, sliced

Small Handful Olives

1/4 Red Onion, chopped

2 Tablespoons Olive Oil

1 Teaspoon Paprika

1 Teaspoon Turmeric

Juice of 1 Lemon

Cook the ‘chicken’ in coconut oil, season with paprika and turmeric. Remove from the heat and once it’s cooled. In a large bowl, combine the chicken, greens, tomato, avocado, pepper, cucumber, olives and onion.

Top with olive oil, lemon juice and seasoning.

Combine well and serve. Enjoy X
